Oreo Truffles

There are only a few things in life that I know to be true:

Sunday mornings are best spent in bed, with a piping cup of tea or coffee, and the New York Times (pass the Arts and Opinions sections, please).

You never, ever regret a workout. (Right?)

A man that orders dessert is a good man. A man that chooses a chocolate dessert over a fruity one is rare...and a keeper. (If you know of one, why haven't you introduced me?)

When in doubt, wear black. With gold. Lots of gold.

These oreo truffles.
Two ways. Mint or Peanut Butter. With chocolate, of course. They are really delicious. Trust.

Peanut Butter Chocolate Oreo Truffles
1 package of peanut butter Oreos
8 oz cream cheese
1 1/12 cups chocolate chips (semisweet or milk chocolate)
1 1/2 cups smooth peanut butter
1 tablespoon vegetable oil

Chocolate Mint Oreo Truffles
1 package of mint Oreos
8 oz cream cheese
1 12 oz package of chocolate chips (semisweet or milk chocolate)
1 tablespoon vegetable oil

Each will make 25-30 truffles, depending on how big or small you roll them.

1) In a food processor, combine the Oreos and cream cheese until completely mixed. Wrap mixture in syran wrap or foil and place in the freezer for an hour or so. The mixture should harden and be firm.

2) If making the peanut butter version, melt the chocolate chips and peanut butter together; add the vegetable oil. If making the mint version, melt the chocolate chips and vegetable oil. Always be careful when melting chocolate over the stove, as if can burn easily. You can indeed microwave; I won't judge you.

3) Line a cookie sheet with wax paper. Once the mixture is cold and firm, break off pieces and roll into 1-inch balls. Using a spoon, dip each ball evenly into the melted chocolate mixture and place on wax paper.

4) Refrigerate the truffles until they harden. These truffles will keep for a while (though they'll be eaten quickly, I assure you), if properly stored in the refrigerator.

And...wait for it, wait for it...those who know me quite well would think I would prefer the peanut butter truffles. And while those are definitely preferred by the majority, I much prefer the mint ones. What can I say? I'm a rebel.

Note: if for some reason, you only have regular Oreos available, you can make the truffles plain and coat them with a peanut butter and chocolate mixture, or chocolate infused with peppermint extract.
